Finland is rich in forests, and the Finns have discovered ways to harvest this abundant bounty. In fact, they have found edible substances in each tree variety that surrounds them. The sweetener Xylitol, which also prevents tooth decay, comes from birch, while jams are made from the spring shoots of spruce. Light tar from pine is used in Finnish sweets and ice cream. Pine, incidentally, is also raw material for Benecol, which lowers cholesterol.
